Over dinner a couple nights ago, I was enjoying tapas, wine, and a lively conversation with friends. Pierre had ordered "reinforcements" for the fallen white wine we made short work of moments before. I was mid-conversation, took a sip of the new wine, and had to put the whole moment on pause to process what I was tasting. That night, I was drinking Domaine Billaud-Simon's Chablis.

In addition, they sometimes use "second use oak" which sidesteps intense "oak bomb" flavors that some California Chardonnays exhibit. Domaine Billaud-Simon also makes the wine in stainless steel which allows the crisp mineral tastes to be the star of the show.
How It Tastes
I was not surprised to learn that Billaud-Simon wines are known for their striking clarity, often described as "diamond-like." My sweaty glass of Chablis was the color of lemon ice. Sip after sip, I enjoyed my favorite flavors of Chardonnays with striking citrus and white flower notes. We were enjoying anchovies and olives on our plates and the wine's refreshing salinity made for a perfect pairing.
